What is cooking measurement conversion?

Cooking measurement conversion changes an amount in a recipe from one unit to another, such as cups to milliliters or cups to grams. A cup, a tablespoon, and a teaspoon measure volume, and a gram measures weight, so the grams in a cup depend on the ingredient.

The size of a cup also depends on the country. A Korean measuring cup is 200 ml. A US cup is 8 US fluid ounces, 236.588 ml, and is often rounded to 240 ml.

How cups are converted to grams

  • Every volume unit is first changed to milliliters: Korean cup 200 ml, US cup 236.588 ml, tablespoon 15 ml, teaspoon 5 ml.
  • Grams are milliliters multiplied by the density of the ingredient. The density is the weight of 1 US cup divided by 236.588 ml.
  • One US cup of all-purpose flour is 125 g, and one US cup of granulated sugar is 200 g. So a Korean cup holds about 106 g of flour and about 169 g of sugar.
  • One Korean cup is about 0.85 US cup, and one US cup is about 1.18 Korean cups.
  • A paper cup (about 180 ml), a Korean rice spoon (about 10 ml), and a household teaspoon (about 5 ml) are customary sizes, not measuring tools.

How many grams is 1 cup of flour?

With the USDA figure, 1 US cup of all-purpose flour is 125 g, and 1 Korean cup (200 ml) is about 106 g. Flour packs down easily. A cup that is scooped and packed weighs more than a cup that is spooned in and leveled.

Is a Korean cup the same as a US cup?

No. A Korean measuring cup is 200 ml. A US cup is 236.588 ml, often rounded to 240 ml, so it holds about 18% more. When a Korean recipe says 1 cup, use about 0.85 US cup.

Where do the gram values come from?

They come from one source: the weight of 1 cup in USDA FoodData Central (SR Legacy). Per US cup, the tool uses water 237 g, whole milk 244 g, all-purpose flour 125 g, granulated sugar 200 g, table salt 292 g, butter 227 g, vegetable oil 218 g, and raw short-grain white rice 200 g.

How close is the result to a real cup?

It is an estimate. The weight of a cup changes with the brand, the grain size, the humidity, and how you fill the cup. Coarse salt, brown sugar, and other flours have different densities from the eight ingredients here. For baking, weigh the ingredients on a scale.

How much is a paper cup or a rice spoon in a Korean recipe?

In Korean home recipes, a paper cup means about 180 ml, and a rice spoon (the spoon you eat with) means about 10 ml. These are customary values. Paper cups and spoons differ in size, so the tool writes "about" next to them.

How does the recipe scaler read numbers?

It multiplies only the first number on each line by the servings you need divided by the servings of the recipe. It leaves the rest of the line as it is. It reads whole numbers, decimals, fractions such as 1/2 or ½, and mixed numbers such as 1 1/2, and writes the result as a decimal with up to two places. A result below 1 keeps two significant digits, for example 0.025. It skips a list number at the start of a line, and it multiplies both numbers of a range such as 1-2.
